About Russian Red Garlic
Russian Red is a standout Marbled Purple Stripe hardneck — one of the most reliable and rewarding varieties you can grow. Known for its big, beautiful bulbs and bold flavor, this is a garlic you'll want to grow year after year. It's hardy, adaptable, and tolerant of wetter conditions that would stress other varieties, making it a great choice for gardeners in the Pacific Northwest, upper Midwest, and Northeast.
Flavor Profile
Strong and rich with excellent depth — Russian Red is a go-to variety for roasting. When roasted, the cloves turn buttery and sweet with a complex, savory finish. Raw, it delivers a full, pungent punch. It holds up beautifully in soups, stews, and slow-cooked dishes where bold garlic flavor is the star.
Best Growing Zones
Russian Red thrives in USDA hardiness zones 3–8 and is particularly well-suited to regions with cold winters and variable moisture. Its tolerance for wet conditions sets it apart from many other hardneck varieties. It is not recommended for zones 9–10 where winters are too mild for proper vernalization.
Planting Instructions
Plant in fall between September and November depending on your zone. Separate bulbs into individual cloves just before planting. Plant 2–3 inches deep, pointed end up, spaced 6 inches apart in rows 12 inches apart. Mulch with 4–6 inches of straw after planting to insulate against freeze-thaw cycles. Garlic will root in fall, go dormant through winter, and emerge vigorously in early spring.
Storage & Curing
Russian Red stores for 5–7 months when properly cured — one of the better storage times among Rocambole-type hardnecks. After harvest, cure in a warm, dry, well-ventilated area out of direct sunlight for 3–4 weeks. Store in a cool, dry location with good airflow. Do not refrigerate.
