German Red is one of the most beloved Rocambole hardneck varieties in North America — and for good reason. Known for its striking purplish-brown skin and deeply complex flavor, this is a garlic that commands attention from the moment you pull it from the ground. Rocamboles are widely considered the most flavorful of all garlic types, and German Red is among the finest examples of the class. If you're growing garlic for the kitchen, this is a variety you need in your garden.

Bold, spicy, and deeply complex — German Red delivers a rich, layered flavor that's exceptional both raw and roasted. Best Growing Zones

German Red thrives in USDA hardiness zones 3–7 and is particularly well-suited to cold Northern climates. Its exceptional cold hardiness and tolerance for wet conditions and temperature swings make it a reliable performer in challenging growing environments. It is not recommended for zones 8–10 where winters are too mild for Rocambole varieties to develop properly.

Planting Instructions

Plant in fall between September and November depending on your zone. Separate bulbs into individual cloves just before planting. Plant 2–3 inches deep, pointed end up, spaced 6 inches apart in rows 12 inches apart. Mulch with 4–6 inches of straw after planting. German Red is a vigorous grower that produces strong scapes in late spring — remove scapes promptly to direct energy into bulb development.

Storage & Curing

German Red stores for 4–5 months when properly cured — typical for Rocambole varieties, which trade longer storage for superior flavor. After harvest, cure in a warm, dry, well-ventilated space out of direct sunlight for 3–4 weeks. Store in a cool, dry location with good airflow. Do not refrigerate. Plan to use or replant by late winter.
