About Chesnok Red Garlic

Chesnok Red is one of the most beloved Purple Stripe hardneck varieties — and Garlic Gods' best-producing hardneck year after year. Originally from the Republic of Georgia, this variety has earned a devoted following among home cooks and market growers alike for its exceptional roasting qualities and reliable yields. If you've ever wanted a garlic that transforms in the oven into something truly special, Chesnok Red is it.

Flavor Profile

Sweet and mild when roasted or cooked, with a rich, full-flavored depth that enhances any dish. Chesnok Red holds its shape and flavor beautifully when baked, making it one of the best garlic varieties for roasted garlic spreads, confit, and slow-roasted recipes. Raw, it has a pleasant medium heat that mellows quickly into sweetness.

Best Growing Zones

Chesnok Red thrives in USDA hardiness zones 3–8 and is particularly well-suited to cold Northern climates. Its robust leaves and cold-hardy nature make it an excellent performer in Minnesota, Wisconsin, New England, and the upper Midwest. It is not recommended for zones 9–10 where winters are too mild for proper bulb development.

Planting Instructions

Plant in fall between September and November depending on your zone. Separate bulbs into individual cloves just before planting. Plant 2–3 inches deep, pointed end up, spaced 6 inches apart in rows 12 inches apart. Chesnok Red's robust foliage benefits from a generous layer of straw mulch (4–6 inches) to protect roots through winter. Expect vigorous spring emergence and large, leafy plants through early summer.

Storage & Curing

Chesnok Red stores for 6–7 months when properly cured — excellent storage life for a hardneck variety. After harvest, cure in a warm, dry, well-ventilated space out of direct sunlight for 3–4 weeks. Once cured, store in a cool, dry location with good airflow. Do not refrigerate.
