Culinary Uses

Chesnok Red is widely considered the premier roasting garlic — its cloves hold their shape in the oven rather than turning to mush, making it the top choice for whole roasted heads, garlic confit, and slow-cooked dishes. Roast a head at 400°F until golden and caramelized, then squeeze the cloves onto crusty bread or stir into mashed potatoes. Its sweetness also makes it exceptional in cream sauces, risotto, and garlic soup. With 8–12 cloves per bulb, it’s a productive variety for cooks who go through a lot of garlic. Also excellent for making garlic powder and dehydrated garlic flakes due to its consistent flavor when dried.

Best Growing Zones

Chesnok Red thrives in USDA hardiness zones 3–8 and is particularly well-suited to cold Northern climates. Its robust leaves and cold-hardy nature make it an excellent performer in Minnesota, Wisconsin, New England, and the upper Midwest. It is not recommended for zones 9–10 where winters are too mild for proper bulb development.

Planting Instructions

Plant in fall between September and November depending on your zone. Separate bulbs into individual cloves just before planting. Plant 2–3 inches deep, pointed end up, spaced 6 inches apart in rows 12 inches apart. Chesnok Red’s robust foliage benefits from a generous layer of straw mulch (4–6 inches) to protect roots through winter. Expect vigorous spring emergence and large, leafy plants through early summer.

Storage & Curing

Chesnok Red stores for 6–7 months when properly cured — excellent storage life for a hardneck variety. After harvest, cure in a warm, dry, well-ventilated space out of direct sunlight for 3–4 weeks. Once cured, store in a cool, dry location with good airflow. Do not refrigerate.
