About Persian Star Garlic

Persian Star is one of the most visually striking garlic varieties you can grow — and one of the most rewarding. Originally from Samarkand in Uzbekistan, this Purple Stripe hardneck is named for the beautiful eight-pointed star pattern its cloves form when the outer wrappers are removed. Beyond its good looks, Persian Star is a reliable, consistent producer that delivers year after year with minimal fuss. It's a favorite among garlic enthusiasts who want something a little different without sacrificing performance.

Flavor Profile

Rich and complex with a medium heat and a pleasant mild zing that lingers without overwhelming. Persian Star strikes a balance between bold hardneck intensity and approachable versatility — it works beautifully raw in dressings and salsas, roasted into spreads, or cooked into soups and sauces. Its nuanced flavor makes it a go-to for cooks who want depth without heat dominating the dish.

Best Growing Zones

Persian Star thrives in USDA hardiness zones 3–8 and is well-suited to cold Northern climates. Its cold-hardy nature and reliable yields make it an excellent choice for gardeners across the upper Midwest, Northeast, and Pacific Northwest. It is not recommended for zones 9–10 where winters are too mild for proper hardneck development.

Planting Instructions

Plant in fall between September and November depending on your zone. Separate bulbs into individual cloves just before planting — you'll notice the distinctive star arrangement as you break the bulb apart. Plant 2–3 inches deep, pointed end up, spaced 6 inches apart in rows 12 inches apart. Mulch with 4–6 inches of straw after planting. Persian Star is a reliable spring emerger and produces strong, healthy scapes in early summer.

Storage & Curing

Persian Star stores for 5–6 months when properly cured — solid storage life for a Purple Stripe hardneck. After harvest, cure in a warm, dry, well-ventilated space out of direct sunlight for 3–4 weeks. Store in a cool, dry location with good airflow. Do not refrigerate.
